FOOD - SWEET POTATO, RED PEPPER AND COCONUT SOUP 'SLOW COOKER'




I love soup, even in the summer time and not only is this one of my slow cooker favourites but its also really really yummy and the coconut adds a really summery flavour.





MAKES - 4 portions
FREEZABLE? - Yes

WHAT YOU NEED
Sweet Potato (750g)
Red Pepper (1 large Red Pepper)
Garlic (2 cloves)
Veg Stock (500ml ish - until it covers the veg, you can always add more if needed)
Onion (1 small)
Coconut Milk (one can, 400g)
Coriander

WHAT YOU DO
> Peal the sweet potatoes, chop them and along with the red pepper, crushed garlic, veg stock and coriander
> Pop everything into your slow cooker, i cook this on low for around 6-7 hours
> Puree the lot and pop it back into the slow cooker
> Add the coconut milk (add it to taste) then let it it heat
> Enjoy
